Organic Strawberry Apple Cobbler Recipe

Ingredients

FOR THE CRUST

300g pecans (do not soak)

9 dates

50g desiccated coconut

1/8 tsp. salt

FOR THE FILLING

360g to 380g cored thinly sliced apples

250g de-stemmed thinly sliced strawberries

2 Tbs. lemon

1 tsp. vanilla

2 Tbs. light agave

Method

TO MAKE THE CRUST

In the bowl of the food processor fitted with the “S” blade, process pecans, dates with the salt until fine, crumbly and just beginning to stick together. Be mindful not to over process. Press the crust into the pan, setting aside 1/3 of this crust mixture for the topping.

TO MAKE THE FILLING

Combine all the ingredients in a bowl and mix well. Evenly distribute the filling on top of the crust. Then crumble the remaining crust on the top.
